Celebrating National Empanada Day

Friday, April 8 was National Empanada Day and our residents enjoyed a special treat.

These fried pastries originated from Galicia, Spain and are usually filled with veggies, meat, or fruit. Did you know that some historians claim that the meaning of “empanada” means “Can I have another one?”

Well, not really.

But they are very tasty and as you can see, our residents thoroughly enjoyed themselves.
